Holidays are not complete if there are no sweets! For a child with gluten intolerance, holiday treats are generally pretty different from the “norm”. We have to watch what kinds of candies he eats and what kinds of desserts are available. I never want him to feel left out because he can’t eat anything at a family holiday. Fortunately, our families have gone out of their way to make sure that Luke has good food to eat at every event. This Easter was no different.
My mother in law wanted to make a bunny cake for Easter dessert and thought of Luke when she was making her plans. She bought these cute Wilton bunny molds for making little cakes just for him.
She asked me to make the little bunny cakes gluten free so that Luke could eat them. I used a Betty Crocker Gluten Free Chocolate Cake Mix, which is delicious and homemade cream cheese frosting! YUM!! They were a little difficult to work with because of the shape, but I think they turned out pretty cute!
Luke ate his little bunny cake with some ice cream and thought it was fantastic! Another simple and fun Easter day treat (and I am only posting this a week late!).
